It's Like Summer in a Pie.

I am yearning for summer.
The hot sun.
Bathing suits and cover ups.
Grilling out by the pool.
Fun times with family at the lake.
So let's pretend like it is.
And since no summer is complete without campfires and roasting marshmallows,
here is a little treat for you.
No campfire required.

1 3/4 Graham cracker crumbs
1 1/4 sticks of butter, melted

Preheat oven to 325.
Form a crust with the Graham and butter.

To make the chocolate:
1 c heavy cream
1/2 c milk
10 oz semi sweet chocolate
2 tbs sugar
1/4 tsp salt
2 eggs

1 bag of large marshmallows

Combine milk and heavy cream and heat over low heat.
Once it begins to simmer, remove from heat and add chocolate.
Once the chocolate is melted, add sugar and salt.
Add eggs.
Pour filling into crust.
Bake for 20-30 minutes.
Once the pie is no longer liquidy, add marshmallows and broil for 1-2 minutes.
Once done, let cool for 1-2 hours.

Yes I know I burned my marshmallows, but I love them that way!
Just don't broil as long if you don't!
